@deckingman +1 It's been a long time pet peeve of me as well. For me the problem is two part. One, as you mentioned, the lack of (auto) scaling. And two, I include (and maybe on your machine too) the water temperature as well, which usually sits around 10°C and is practically useless.
I havent posted about this before because I don't have a good solution for the 2nd problem appart from maybe a logarithmic temperature axis.
I was just clicking through the DWC wishlist to see what, if anything, had been implemented or at least acknowledged (not much by the looks of it) and came across this which is quite an old post. Ref the second problem, I wouldn't have thought it was beyond the wit of man to display two or more "Y" axis with different scale factors on the same (auto-scaling) graph. So for example the hot end could be scaled to say 0-250, the bed at say 0-80, and the liquid coolant at say 0-20. Each of the scale values would be displayed using the same colour as the temperature plot.
