For those of you who have a beautiful "Red, Blue, Yellow, Black, White"-cable-BLTouch:

Blue goes to expansion pin 1 (+5V)
Red goes to expansion pin 2 (GND)
Yellow goes to expansion pin HEATERx
White goes to Z_PROBE_IN
Black goes to GND on ZPROBE port

That's rather old, so I recommend you upgrade to a more recent version such as 2.05.1. Read the upgrade notes first, including the ones for the versions you skipped.

When you run M584 without parameters, what does it report?

When you send M98 P"config.g" are there any error messages?

it must be a setting you have selected in cura. there is nothing in the config that explains it. but there are errors non the less.

M350 X64 Y64 Z16 I0 ; configure microstepping without interpolation
M350 E16 I1 ; configure microstepping with interpolation

unless you have a very specific reason stay with x16 and interpolation for all your axis.

M906 X800 Y800 Z800 E800 ; set motor currents (mA)

these are default values and should be adjusted for your motors

M305 P1 T100000 B4138 R4700 ; set thermistor + ADC parameters for heater 1

B4138 is the default and wrong for your thermistor.

since you have the duet and the cr10 s5 it should be easy to open the box and see if it fits.
