My big question here is: IEC CABLE --> FIltered, Fused, IEC Inlet --> Live WAGO + Neutral WAGO + GND WAGO. Then each wago to the appropriate connections for the 3 SSR's.
Is it this simple?
Yes.
Sounds good to me, assuming your wiring size is appropriate, fusing and filtering is sized appropriately.
WAGOs are good, btw - more reliable than most forms of connector (or maybe, more foolproof - more difficult to do badly / dangerously).
Is there something else I should be doing? Possibly resistors between the wago and the SSR or something?
Not that you should be doing, in my opinion. You don't want to add resistors to the mains wiring.
You could put a RCD in the system (I think that's probably a GFCI to you, though that's a silly name for it, imo) if you want more protection. Personally, I don't have anything additional for my printers - just the RCD that's on the sockets circuit at the consumer unit (distribution board for the house).
