You'd need to type and hit enter on each field for the new temp to be applied. if you do this while the heater is still heating up, the update may show with a delay.

Yes. In RRF3 sensors are defined independently of heaters. You can display them in DWC if you click on Extras.

What version of the firmware are you using.
With version 3.4.x a filament sensor triggers an event which needs to be handled:

Perhaps something is missing from your configuration.
