1x 5V fan and 1x 24v fan

Is it possible to set 1x 5V part-cooling fan and 1x 24v hotend cooling fan up with the duet maestro?

Yes. The 4 fan pins are made up of two banks on the Maestro; the three fan headers closest to the main power input are one bank (ALWAYS ON FAN, PWM FAN 0 and PWM FAN 1), and the other bank is PWM FAN 2. There are three-pin connectors on each end of the row of fan pins, that select the voltage for each bank. So you can set the first bank to VIN (ie 24V), and connect the hot end cooling fan to FAN 0 or 1 (if you want to control it), then set the second bank to 5V, and connect the part cooling fan to FAN 2. @Stephen6309 Duet Maestro is a bit different from Duet 2 Wifi/Ethernet, in that it has an extra fan header that has it's own voltage selector. See my answer above.

AFAIR, one bank has two controllable fans, the other has one controllable and one always-on fan.
