Bed mesh level inaccurate

After running bed mesh level and then printing a large flat object, mesh leveling is wildly inaccurate.
Printing on an Ender 6 (250x250x250)
Object to print = 247x247x11Print squishes so much that Bondtech DDX3 extruder clogs in some areas and filament won't stick due to too far away in other areas.

Thickness starts at 0.40mm and within 2.25" (diagonal) the thickness is so thin I can see thru it.
Material is 3DXtech MaxG PETG Dark Gray
Is there anyway to increase the accuracy / efficacy of mesh bed leveling?

@davidewen one possibility is that the probe offsets are wrong and mesh compensation is at the wrong location. Please post your config.g file, an image of the mesh compensation map and you can check with M122 whether mesh comp. is active (the text is like: bed compensation in use: mesh).

@davidewen Do you mesh-probe the bed, when it is at room temp or working temp? That can have a great influence on the flatness of the bed. Depending on the probe-type you'd have to switch off the bed heater while probing, because the electric field can change the trigger height.
