@Audi2502 Please post your full config.g, or at least the full motor settings part, including M584 setting. Please also send M115 and post response, to check firmware version is really 3.1.1.

2.5 amps on all your extruders? really?
the firmware limit is 2.4 amps. If you really need that much you'll need active cooling on your board at a minimum.
Do you have the model of the extruder stepper motors? Or a link to the datasheet? -

this concerns me as well, therefore I am asking.
As long as I use only one extruder 900 mA the torque of the Nema 17 with 44 N are fully enough.
As soon as I add another in the configuration the torque drops and I have to increase the current. -

Do you have some information about the installation?

@Audi2502 Are you losing torque during printing, or is this when testing and sending gcode commands directly (or using the DWC buttons to extrude)? If you're running a gcode file, check there are no extra M906 commands in it. You can also send M906 on it's own in the console to check the current current setting.
Check your wiring of the Duex; there should be a thick, short ground cable between the negative terminals of the Duet and Duex; see https://duet3d.dozuki.com/Wiki/Duex2_and_Duex5_Features#Section_Wiring
Do you still lose torque on the second extruder with the Duex disconnected?

I found out during printing and then researched on this and other forums. Doubble checked nearly everything which came out out.
When I push the DWC buttons or sending a gcode command it is the same behavior.
I already checked the wiring and everything looks fine to me.I did not test with removed the Duex5, due to the fact that my bltouch is on the DUEX5.
What I can tell is that when I only use the Duet2 Wifi extruder ports, it is the same behaviour.
