Temporarily disable heater thermal safeguards?

I don't know how I'm supposed to change nozzles or clear clogs. If I touch a metal wrench to the heaterblock, or take the hotend out and clamp it in a vice, the thermal protection trips. How do I temporarily turn off all heater thermal runaway stuff?

Shouldn't be doing any of that stuff with it powered anyway. Heat up, turn off the heater, do the thing, heat back up if necessary, etc.

As Tim says it's a bad idea to do that while powered as you could induce a short between the heater and the thermistor/PT100 that can damage the board.
That said you can change the time a heater will tolerate a fault by using M570:
