First Layer

I am using a z probe mesh bed level and home the z and i keep having to change the trigger height every couple prints to get that good first layer because if i don't either its way to high or scraping the bed. Is this normal or should i be changing something else?

my printer i built myself and its a cartestian i believe and it has a massive build area of ~3ft cubed

Your trigger height for your probe is negative in the G31 command. Meaning it triggers 2.3mm below the bed surface. How did you measure the trigger height?

I think you should give firmware 2.01 a go to see if one of the recent bug fixes for mesh leveling solves your issue.
When you do, clear your Heights map, rerun the trigger height measuring, and redo g29. Then make sure your new height map is being loaded before a print with g29 s1.
