Huge overshoot on heating and rapid cooling after PID

Hey guys, so I've run countless pid runes from ambient temperature but no matter what on first hear up it over shoots by about 20c causing a heater fault to flag... But when it settles, as soon as my part cooling fan comes on it drops about 20 - 25c within a few seconds...
The extruder is a BIQUH2 with a 50W heater cart.
The strange thing is the system seemed to be fine when using a steel nozzel but since switching back to brass this happens, i've done a PID tune at least 5 times now

@craigrobbo How are you doing the pid tuning? Tuning as a tool by using M303 T0 S250, or what temp you need. It'll take the cooling fan into account. You can use M143 to a higher temp if need. Add a sock or position the cooling fan to not blow on the heater.

Can you share with us your firmware version, what command you used to tune, and the resulting values? It can also be helpful to see a picture of the temperature graph from when you get the fault.

Im using the exact command you given me, M303 follows by the T0 and i am using S200 as its my most common temp
