It's a Duet 2 WiFi and running RepRapFirmware for Duet 2 WiFi/Ethernet 3.2-beta2 (2020-10-05b2)
Did I mention that it worked like a charm before I changed the bed surface and the firmware?

I is not a parameter in RRF3 anymore

Removed the I parameter from M558 and the extra M in M501, unfortunately it didn't change anything.
doesn't the probe trigger independently, no matter what is set in the config?
I mean if it's just has supply voltage. I thought what's in the config is only signal interpretation and conditioning?!

can you change the probe into Digital mode?
change the type to P8 and power off the printer and turn it back on. -
I've got a print running, as soon as it finished I'll give it a try. 20mins I guess.
If that works I'm kinda worried about missing functionality, since analog mode has some advantages over digital.

4 Flashes means analog mode, 2 Modes mean digital. -
where did you read about the initialization flashing? I didn't know that yet.
also I'm not sure how the sensor should know about how it's initialized since the signal pin is only an output pin iirc.

to enable the pullup resistor try
C"^zprobe.in"maybe that switches it to digital mode, this is just a wild guess based on what i understand from the website.

thanks for your effort @Veti I got it fixed again.
it seems that the electrolytic capacitor was slightly bent upwards so it didn't properly shield the IR light between LED and receiver. my guess is that somehow the shiny plastic housing reflected the light in an uncontrolled manner.
At least bending it down made it work again.

it would still be interesting how you would get the mini ir to change to the digital mode on a duet2.
