Not sure how you took a section that was specifically about a certain version of the BLTouch to mean your probe, but anyway...

I've updated the Duet 2 section here https://docs.duet3d.com/en/User_manual/Connecting_hardware/Z_probe_BLTouch#wiring to say:

This does not apply to other probes, eg BLTouch V3.0 and later, BIQU Microprobe, Creality CR Touch, which output 3.3V by default. Though be aware some can be changed to 5V output.

@brainztorm It might be that your extruder jerk is limiting the top speed. If you retract 5mm at 100mm/s (ignoring all acceleration and deceleration for a moment) this only takes 1/20th of a second. This is very short amount of time. If your jerk is set too low it might be that the actual reachable acceleration on this short distance of movement is capped.
